This is Sims’ third restaurant in Livingston Manor having partnered with brother, Ryan at coffeehouse Peez Leweez and the critically acclaimed Resort. Born and raised in Livingston Manor he returned to the community in 2002 and continues to believe in the promise the town and area have shown. Based in NYC and the Manor, Sims currently works with celebrated chefs at various projects throughout the country as a consultant. Sims loves good food, strong drinks, and enticing conversation. The Lazy Beagle marks a welcome return to his roots and to these simple ingredients that serve as the foundation at the LB. When he’s not getting in the way of his staff (who do a fine job without him, thank you very much), or pulling Peter off the bar after midnight, Sims can usually be found telling stories at the bar.
